it is definitely not the most frequent dish I prepare :), and when I do, it means it’s needed! the magic fix of this salad hides behind the freshly chopped herbs and fresh citrus fruits I use. some herbs are home grown…it is always nice to grow some herbs at home and have them fresh when most needed. the salad and photo (thanks Cris, you’ve got skills!) was recently done in Croatia, while on vacation and that one morning it felt like the right thing to eat. no questions asked.

I had a couple of tomatoes, a cucumber, one pepper, one red onion, few green onions, salad (i like the rocket crunchy type and the sound that comes with it) and fresh herbs – all of which I very wisely brought from home (I knew they would come in handy at some point)…fresh green basil, red basil, mint and oregano. We also had salty Croatian cheese.

I cut those vegetables and cheese into shapeless, random pieces – not too small so that one can tell what is it we’re eating – and hand pulled apart the herbs into smaller pieces (when possible, I avoid cutting herbs by knife and use my hands…I think the after flavor is what I am after). The virgin olive oil and the hand smashed lime, lemon and/or grapefruit juice is what gave it the right twist of flavor! I spiced it to taste and added a bit of Tabasco…dig in, save nothing!

Ingredients – serves 4:

2 fist size tomatoes

1/2 fresh cucumber

1 red onion

1 green onion

few leaves of green salads

150 g of cheese (preferably salty)

1 bell pepper

fresh herbs: green basil, red basil, mint and oregano

olive oil, fresh lime, lemon and grapefruit juice

Tabasco, salt and pepper
