do you like potatoes?

yes? then you will love this one! no? then you will reconsider after this recipe!

all we need is a few big potatoes, about the size of a decent mango fruit. slice them width wise, but not completely. you can lean the potato against a wooden platter to ensure your knife does not cut throughout.

now slice down onion rings, garlic, smoked fat/lard, smoked bacon, butter (very cold), cheese (parmesan, gruyere, etc) and squeeze it in between the sliced potatoes. once everything is nicely stuffed in, add on top grated cheese (mozzarella and/or fol epi or whatever you have around) and wrap the masterpiece in aluminum foil and shove it in the oven for 30 min (180 Celsius).

after a good half an hour, take the potatoes out, open the foil, sprinkle some rosemary on top and put it back in the oven (without closing the aluminum foil) for another 30 min. once you see the cheese catching a beautiful brownish color, rest assured, the craziness is just over yet. take them out, put some fresh cream on top, add fresh chive or parsley, salt and pepper and serve to impress. whooha!

1-2 onions

4-5 cloves of garlic

smoked lard

smoked ham

cheese (parmesan, gruyere, mozzarella and fol epi or similar)

sour cream

rosemary, chive or parsley (or both)

salt and pepper
